After returning to the US, she began working on policy issues with the New York Sustainable Agriculture Working Group (NYSAWG). She participated in the Cornell LEAD-NY program for agricultural leadership and became familiar with all aspects of the state food system. In 2006, Kate joined NOFA-NY as the projects coordinator—developing educational programs for farmers, gardeners, and consumers. She became the Executive Director in 2009 to continue NOFA-NY’s work in statewide education and advocacy that aims to build a sustainable regional food system. With her husband, Zach Borus, she grows fruits and veggies and raises three chickens in her Rochester, NY urban garden. David Gann’s scientific career spans over 30 years in scientific, engineering, and management experience as an integral member of numerous scientific teams. He has been successful in developing cutting-edge technologies such as the first ultra-high-density magnetic recording medium for Zwan Magnetics (early 1980’s), which included research into the manufacture of rare-earth magnets. During the late 1990’s, in conjunction with UCLA, Mr. Gann’s began his research into the detection and labeling of nano-sized particles found in homeopathic solutions. He was involved with the Department of Immunology at UCLA researching an isolated particle as a stimulant of T-cells (human immune system), with more than 57 blind studies all demonstrating dramatic significant improvements in immune response. Nutrition Transition: Globalization and Trends in Nutrition and Health Ellen Kamhi PhD, RN, www.naturalnurse.com interviews Dr. Anna Kelles, Director of the School of Applied Clinical Nutrition at New York Chiropractic College. Dr. Kelles has dedicated her career to elucidating the connections between nutrition, human health, and the health of our environment. At Binghamton University she began a formal exploration into human and environmental health through a dual bachelor in Biology and Environmental studies. She studied macrobiotic nutrition at the Kushi Institute and spent years in a remote Ecuadorian village exploring the nutritional status of children and household environmental conditions and promoting sound nutritional and environmental practices, and worked as a high school biology teacher and guide in the jungle. Dr. Kelles earned a PhD in Nutritional Epidemiology from The University of North Carolina - Chapel Hill. Her research explored the long term impact of globalization on divergent dietary and physical activity patterns between Filipino mothers and children. Dr. Kelles has published several articles as well as a book chapter exploring deleterious dietary behavior patterns in developed and developing countries and subsequent policy recommendations.
